Striker Chef's Steamed Yellow Surf Clams

  • 10-15 yellow surf clams
  • a handful of cilantro roots
  • 1 pack of enoki mushrooms
  • 3 tbsp store-bought chogochujang
  • 1 tbsp horseradish sauce
  • a little scallions

Recipe 🍳

  1. Using scissors or a knife, cut the yellow surf clams in half lengthwise and clean out the internal organs and sand under running water.
  2. Fill a steamer with water and bring to a boil. Once steam rises, spread out the washed cilantro roots and enoki mushrooms with the stems removed.
  3. Place the prepared clams evenly on top of the vegetables without overlapping.
  4. Cover the steamer and steam over high heat for about 5 minutes until moist and tender.
  5. In a bowl, mix 3 tbsp of store-bought chogochujang and 1 tbsp of horseradish sauce until well combined.
  6. Lightly sprinkle chopped scallions over the finished sauce for extra aroma.
  7. Serve the steamed clams and vegetables on a bamboo steamer or plate that allows drainage, accompanied by the special sauce.
  1. Cut clams in half, remove innards, and rinse under water.
  2. Line steamer with cilantro roots and enoki mushrooms, place clams on top, and steam for 5 minutes.
  3. Mix chogochujang, horseradish sauce, and chopped scallions to make the sauce.
  4. Arrange steamed clams and vegetables on a plate and serve with the sauce.

  • Do not steam clams for more than 5 minutes, as they become tough; a short steam keeps them tender and bouncy.
  • To prevent moisture from pooling under the clams when serving, use a perforated plate or basket to maintain the best texture.
