Striker Chef's Golden Dalgona Bokkeumbap

- 2 instant rice packets
- 2~3 egg yolks
- 1 green onion
- a little seasoned salt
- a little MSG
- 1/2 tbsp minced garlic
- 3 tbsp cooking oil
- 1 tbsp soy sauce
- dalgona ingredients (2 tbsp sugar, a pinch of baking soda)
Recipe 🍳
- Place 2 packets of instant rice, egg yolks, and finely chopped green onion in a large bowl.
- Add a little seasoned salt and MSG to give the rice a basic seasoning.
- Add 1/2 tbsp minced garlic and 3 tbsp cooking oil, and mix well so that each grain of rice is evenly coated with egg and oil.
- Put the mixed rice into a dry pan and stir-fry over medium heat, letting moisture evaporate, until the rice becomes fluffy and separate.
- When the rice grains are well separated and the pan bottom is clean, increase the heat to high to add a smoky flavor (wok hei).
- Make a space on one side of the pan, pour in 1 tbsp soy sauce, and let it briefly boil to develop aroma, then quickly mix it with the rice and stir-fry.
- Make dalgona using sugar and baking soda in a ladle or small pan, let it cool, then crush it coarsely to prepare dalgona powder.
- Press the fried rice firmly into a bowl, then invert it neatly onto a plate, and sprinkle the prepared dalgona powder on top to finish.
- In a bowl, mix instant rice, egg yolks, chopped green onion, seasonings (seasoned salt, MSG), and cooking oil until evenly combined.
- Put the mixed rice into a pan and stir-fry over medium heat, letting moisture evaporate, until it becomes fluffy.
- Pour soy sauce onto the edge of the pan to create aroma, then stir-fry together with the rice once more.
- Arrange the fried rice nicely in a bowl, then crush the homemade dalgona powder and sprinkle it on top.
Cooking tips 💡
- If you stir-fry on high heat from the start, the minced garlic may burn and give a bitter taste, so it's important to slowly evaporate moisture over medium or low heat to infuse the garlic flavor.
- The caramel aroma of the dalgona powder enhances the savory flavor of the fried rice, so it's better to crush it into slightly coarse pieces rather than very fine powder.
