Ingredients needed 🛒2 servings
- Feta cheese 1 pack
- Heavy cream 200ml
- Sugar 1 tbsp
- Scallions 3 stalks
- Baguette a few slices
- Butter 1 tbsp
- Small packaged nuts 2 bags
- Honey as needed
Recipe 🍳
- In a mixing bowl, add heavy cream and 1 tbsp of sugar. Whisk vigorously until stiff peaks form to make whipped cream. (Using an ice bath under the bowl or a mixer will speed up the process.)
- Lightly butter a pan and toast the baguette slices on both sides until golden brown, then let them cool slightly.
- Crumble the feta cheese like tofu, then add it to the prepared whipped cream and mix well.
- Add the chopped scallions and mix lightly to complete the feta cheese cream.
- Spoon a generous amount of the feta cheese cream onto a plate. Serve with the toasted bread and nuts. Drizzle honey over everything and sprinkle with more scallions to finish.
- Add sugar to heavy cream and whip until stiff.
- Toast bread in butter and let cool.
- Mix crumbled feta cheese and scallions into the whipped cream to make the spread.
- Serve on a plate with toasted bread, nuts, honey, and scallions.
Cooking tips 💡
- Whipping the cream until completely stiff is crucial for a smooth and rich spread texture.
- Besides baguette, it pairs wonderfully with various breads like sandwich bread, regular baguette, or crackers, as well as other snacks.
- Although it contains honey and sugar, the inherent saltiness of feta cheese dominates, creating a subtle sweet and salty balance.
