  • 1/2 eggplant
  • 1/2 zucchini
  • some broccoli
  • 5-6 cherry tomatoes
  • generous amount of olive oil
  • 2 plain yogurts
  • 2 tbsp lemon juice
  • 1 tbsp whole grain mustard
  • some skewers

Recipe 🍳

  1. Cut the eggplant, zucchini, and broccoli into bite-sized pieces suitable for skewering, at an appropriate thickness.
  2. Generously coat a heated pan with olive oil and place the cut vegetables and cherry tomatoes, grilling until golden brown.
  3. In a bowl, combine 2 plain yogurts, 2 tbsp lemon juice, and 1 tbsp whole grain mustard, and mix well to prepare the dressing.
  4. Alternate the grilled vegetables and tomatoes on skewers for an attractive presentation.
  5. Place the finished yogurt dressing in the center of a plate and arrange the grilled vegetable skewers around it.
