- Fresh kimchi 350g (finely chopped)
- Pork belly (front shoulder) 350g (diced into bite-sized pieces)
- Onion 1 large (200g)
- Green onion 1 stalk
- Water 500ml
- All-purpose seasoning paste 150g (total seasoning paste ingredients: gochujang 250g, medium chili powder 150g, sugar 100g, minced garlic 60g, soy sauce 50g, beef dashi 50g, monosodium glutamate 15g, water 300g, black pepper to taste)
Recipe 🍳
- Mix the seasoning paste ingredients (gochujang, chili powder, sugar, minced garlic, soy sauce, dashi, MSG, water, and pepper) thoroughly until no lumps remain, creating the all-purpose seasoning paste.
- Place 350g of finely chopped fresh kimchi and 350g of diced pork belly (front shoulder) into a pot, cutting them roughly with scissors or a knife.
- Add 500ml of water and stir in 150g of the pre-made all-purpose seasoning paste evenly.
- Top with 1 chopped onion and 1 green onion sliced diagonally.
- Turn on the heat and start timing as soon as the kimchi jjigae begins to boil vigorously. Simmer gently for exactly 7 minutes to finish.
- Mix all seasoning paste ingredients to make the kimchi jjigae all-purpose seasoning paste.
- Combine chopped kimchi, pork, 500ml water, and 150g seasoning paste in a pot.
- Chop the onion and green onion and place them on top of the stew.
- Start timing from when the stew begins to boil and cook for exactly 7 minutes to finish.
