  2. Place 350g of finely chopped fresh kimchi and 350g of diced pork belly (front shoulder) into a pot, cutting them roughly with scissors or a knife.
  3. Add 500ml of water and stir in 150g of the pre-made all-purpose seasoning paste evenly.
  4. Top with 1 chopped onion and 1 green onion sliced diagonally.

  1. Mix all seasoning paste ingredients to make the kimchi jjigae all-purpose seasoning paste.
  2. Combine chopped kimchi, pork, 500ml water, and 150g seasoning paste in a pot.
  3. Chop the onion and green onion and place them on top of the stew.
  4. Start timing from when the stew begins to boil and cook for exactly 7 minutes to finish.

Cooking tips 💡

  • Use fresh kimchi with a sharp tangy flavor rather than overly fermented, heavy kimchi to ensure the broth remains clear and refreshing.
  • Use a thin-bottomed pot with excellent heat conductivity so the seasoning penetrates quickly into both meat and kimchi, enhancing the overall flavor in a short time.
  • Serve over a bowl of steamed rice, generously ladling in the thick kimchi jjigae broth and meat, then mix in a sprinkle of kimchi powder and sesame oil for a perfectly balanced bite.
