Ingredients needed 🛒2 servings
- fresh abalone 60g
- yellow croaker strips 50g
- onion 1/2 head
- green chili pepper 1 piece
- scallion 1 stalk
- sugar 2 tablespoons
- corn syrup 4 tablespoons
- minced garlic 1 teaspoon
- soy sauce 1 teaspoon
- plum syrup 2 tablespoons
- gochujang 6 tablespoons
- red pepper powder 2 teaspoons
- perilla oil 2 turns
- sesame seeds a pinch
Recipe 🍳
- In a bowl, combine sugar 2 tablespoons, corn syrup 4 tablespoons, minced garlic 1 teaspoon, soy sauce 1 teaspoon, plum syrup 2 tablespoons, gochujang 6 tablespoons, and red pepper powder 2 teaspoons. Mix well to make the dressing.
- Add yellow croaker strips 50g to the prepared dressing and toss to let the seasoning fully penetrate the strips.
- Slice half an onion into thin strips, and finely chop the green chili pepper. Add both to the dressing.
- Cut the scallion in half lengthwise, then slice into long, thin strips to make green onion garnish.
- Add the sliced abalone 60g to the bowl with the vegetables and gently toss together.
- Sprinkle perilla oil 2 turns and sesame seeds over the mixture for added richness.
- Transfer the salad to a serving plate, arrange the abalone and yellow croaker on top, and generously place the green onion strips as a finishing garnish.
- Prepare a spicy-sour sauce using gochujang, red pepper powder, sugar, corn syrup, and other seasonings.
- First toss the yellow croaker strips in the sauce to absorb flavor, then add the abalone, onion, and chili pepper and mix lightly.
- Combine perilla oil and sesame seeds, place on the plate, and top with fresh green onion strips as a final garnish.
Cooking tips 💡
- Do not mix the scallions into the dressing at the beginning—doing so will dull their sharp, fresh flavor. Instead, add them just before eating for maximum freshness.
- Marinating the yellow croaker strips in the sauce first allows them to absorb moisture from the onion, resulting in a tender, juicy texture.
