Baek Jong-won's Soy Sauce Cold Noodles
A super simple soy sauce cold noodle recipe by Baek Jong-won that is easier to make than ramen.

- 1 serving of somyeon
- 1L water
- 1 cup soy sauce
- 1/2 cup sugar
- 1/3 cup mirin
- 1/3 cup vinegar
- 2-3 cheongyang chili peppers
- some scallions or chives
- enough ice
- a little sesame oil
Recipe 🍳
- Bring a generous amount of water to a boil in a pot, then add the somyeon and cook. When it boils, add cold water as needed to cook the noodles until chewy.
- Rinse the cooked somyeon immediately in cold water, then soak in ice water to achieve a cold and springy texture.
- In a pot, combine 1 cup soy sauce, 1/2 cup sugar, and 1/3 cup mirin and bring to a boil to make a soy sauce base. (For a quicker version, boil the seasonings with a little water to dissolve the sugar, then mix with the remaining cold water.)
- Let the soy sauce broth cool completely, then add 1/3 cup vinegar and mix.
- Finely slice the cheongyang chili peppers and scallions for garnish.
- Place the drained somyeon in a bowl and pour the cold soy sauce broth over it.
- Top with the sliced chili peppers and scallions, and drizzle with a little sesame oil to taste.
- Boil the somyeon, then rinse in cold and ice water.
- Boil soy sauce, sugar, and mirin to make broth, cool, then mix with vinegar.
- Slice cheongyang chili peppers and scallions for garnish.
- Place somyeon and broth in a bowl, top with garnish and sesame oil.
Cooking tips 💡
- When cooking the somyeon, cook it a bit softer than usual so that the noodles don't become hard when added to the cold broth, maintaining a good texture.
- If you make the broth in bulk and store it, you can enjoy it multiple times. For a quick meal, just boil the seasonings and adjust temperature with cold water and ice.
