Ttukdak Hyung's Dubai Chocolate Bubble Tea

A home café beverage made by layering leftover precious pistachio cream and melted chocolate sauce over milk and tapioca pearls, created after making Dubai mochi.

  • Chocolate syrup, as needed
  • Cooked tapioca pearls, 2 tbsp
  • Milk, 1 cup
  • Leftover homemade pistachio cream, as needed
  • Leftover melted dark chocolate sauce, as needed
  • Ice, plenty

Recipe 🍳

  1. Drizzle the sweet chocolate syrup in a zigzag pattern along the inner wall of a tall clear glass to create a decorative pattern.
  2. Generously layer the pre-cooked chewy black tapioca pearls at the bottom of the glass according to your preference.
  3. Fill the glass with plenty of ice cubes to keep the drink refreshing.
  4. Carefully pour the nutty white milk up to about 70-80% of the glass to form the base layer.
  5. Slowly pour the bright green pistachio cream leftover from making mochi over the milk layer to create a middle green layer.
  6. Finally, top with the leftover warm melted dark chocolate sauce and finish the layering, ready to stir with a straw.
  1. Coat the inside of a glass with chocolate syrup, then add tapioca pearls and ice at the bottom.
  2. Pour in enough milk to form a base layer.
  3. Carefully top with leftover green pistachio cream and warm melted chocolate sauce to finish.

Cooking tips 💡

  • If the dark chocolate sauce on top is too cold, it may harden like a stone upon contact with the milk. It is better to add it while slightly warm and fluid for smoother mixing.
  • Using store-bought frozen quick-cook tapioca pearls, thaw them in boiling water or a microwave for 1-2 minutes for easy café-quality results.
