  • Glass noodles: 150g
  • Carrots: 60g
  • Onions: 200g
  • Shiitake mushrooms: 50g
  • Spinach: 60g
  • Cooking oil: 1 tablespoon
  • Beef sirloin for japchae: 200g
  • Black pepper: 0.2 tablespoon
  • Salt: 0.3 tablespoon
  • Water: 5 cups (250ml)
  • Cola: 1 cup (50ml)
  • Soy sauce: 40ml
  • Sugar: 1 tablespoon
  • Oyster sauce: 0.5 tablespoon
  • Minced garlic: 0.5 tablespoon
  • Beef Dashida: 0.5 tablespoon
  • MSG (Miwon): 0.3 tablespoon
  • Dark soy sauce: 0.5 tablespoon
  • Sesame oil: 2 tablespoons
  • Sesame seeds: 2 tablespoons

Recipe 🍳

  1. Soak 150g of glass noodles (dried) in water and prepare.
  2. Slice one medium onion and prepare.
  3. Slice shiitake mushrooms and prepare.
  4. Slice carrots and prepare. (A mandoline slicer can be used)
  5. Prepare the spinach. (You can wash the spinach roots clean and prepare them, or cut them off with scissors.) *Highly recommended to add various vegetables such as chives, fish cakes, fried tofu, bell peppers, wood ear mushrooms (soaked)! However, since chives wilt quickly, add them at the same time as the spinach.
  6. In a pot, add cooking oil and pork sirloin for japchae. Season the meat with a little salt and pepper, then stir-fry with chopsticks until the meat is golden brown. For pork, you can use any cut from the mart or market labeled for japchae, cut into finger-length strips. Pork used in japchae is usually lean cuts like sirloin or hind leg with less fat.
  7. When the meat is golden brown, add water and cola. Adding cola to japchae might seem unusual, but it not only provides sweetness instead of sugar but also gives the dish a delicious, glossy color, similar to how brown sugar is used in japchae. If you don't have cola, you can add more water instead.
  8. Add soy sauce, sugar, oyster sauce, minced garlic, beef Dashida, and MSG, and mix well until dissolved. The MSG (Miwon, beef Dashida, anchovy Dashida, etc.) mentioned in the recipe is optional and can be added according to your preference. (If you don't want chemical seasonings, omit them and adjust the seasoning with salt, fish sauce, etc., while cooking!)
