Slice the spam evenly into 0.5cm thick pieces, cutting crosswise.
Heat a dry pan over medium heat. Place the spam in the pan without additional oil and cook until golden brown on both sides. Wipe off excess oil with kitchen paper.
In a bowl, beat 4 eggs with 1 tablespoon of mirin. Pour the mixture into a greased pan and cook over medium-low heat to form a thick omelet similar in thickness to the spam slices.
Place the cooked spam on top of the cooled omelet, then cut both into uniform pieces of the same size.
In a small pot, combine 1 tablespoon soy sauce, 1 tablespoon water, 1 tablespoon sugar, and 1 tablespoon mirin. Simmer until reduced and slightly thickened. Remove from heat and let cool to make the teriyaki sauce.
Mix 3 bowls of warm rice with 2 tablespoons sesame oil and 2 tablespoons toasted sesame seeds, stirring well to season.
Cut the sushi seaweed into long strips about 3–4cm wide.
Line the inside of a clean, empty spam can with plastic wrap, leaving extra space. Fill with seasoned rice, pressing down firmly to level the surface. Spread 0.5 teaspoon of teriyaki sauce evenly on top.
Place the prepared omelet slice on the sauce, sprinkle a little mayonnaise, then add the cooked spam. Pull the plastic wrap upward to invert and release the contents from the can.
Wrap the center portion with the seaweed strip to secure, then wrap tightly with plastic wrap to prevent drying and keep the seaweed crisp.
Slice spam into 0.5cm thick pieces, fry until golden, wipe off oil. Prepare a thick omelet with eggs and mirin, then cut it to match the spam size.
Simmer soy sauce, water, sugar, and mirin to make the sauce. Season rice with sesame oil and toasted sesame seeds.
Line the spam can with plastic wrap, then layer in rice, sauce, omelet, mayonnaise, and spam in order. Invert and remove from the can, then wrap with the seaweed strip to finish.
Cooking tips 💡
If the spam doesn’t come out easily from the can, briefly soak the entire can in hot water for 1 minute—the internal grease will melt and help release the contents.
Since spam is naturally salty, avoid adding extra salt to the rice to maintain balanced seasoning.
If not eating immediately, wrap tightly with plastic wrap to prevent the rice from hardening and the seaweed from becoming stiff due to moisture loss.
