  • Starch, plenty
  • Water, as needed
  • Egg white, a little
  • Salt, a pinch
  • Pepper, a little
  • Lime, 1
  • Carrot, a little
  • Red cabbage, a little
  • Strawberries, as needed
  • Soy sauce, a little
  • Vinegar, a little
  • Sugar, as needed
  • Cooking oil, for frying

Recipe 🍳

  1. Cut the pork into thick bite-sized pieces and season with salt and pepper.
  2. Mix starch with egg white and water little by little to make a thick, sticky batter.
  3. Coat the seasoned pork in the batter and deep-fry in oil at 170°C.
  4. During frying, lift the pork out to expose it to air and gently tap or pinch it to release moisture. Repeat this process for a total of 2-3 fryings.
  5. Slice the carrot and red cabbage thinly. Grate the lime zest and juice the lime.
  6. In a pan, bring water, soy sauce, vinegar, and sugar to a boil. Add the vegetables and cook for 1 minute, then thicken with a starch slurry.
  7. Once the sauce has thickened, add the lime juice and halved strawberries, and gently mix.
  8. Place the crispy fried pork on a plate, pour the sauce over, and finish with a sprinkle of lime zest.
