Seungwoo Dad's Southeast Asian Style Pork Rice Bowl

Recreate the authentic flavor of Southeast Asian Pad Kaprao Moo Sap at home using just fish sauce and basic vegetables for an exotic ground pork rice bowl.

Ingredients needed 🛒1 servings

  • Ground pork as desired (generously)
  • 1/2 onion
  • 1-2 chili peppers
  • Garlic to taste (minced or sliced)
  • A little scallion
  • Fish sauce (or anchovy sauce / sandfish sauce) to taste
  • Alternative seasoning (if no fish sauce): 2 tsp soy sauce, 2 tsp vinegar, 1 tsp sugar
  • 1 bowl of rice
  • 1 egg

Recipe 🍳

  1. Finely chop the onion and chili peppers; mince or slice the garlic.
  2. Slice the scallion into small pieces and set aside. (Add at the end to keep it crisp.)
  3. Prepare fish sauce or alternative sauce. If no fish sauce, mix 2 tsp soy sauce, 2 tsp vinegar, and 1 tsp sugar to make a substitute.
  4. Heat oil in a pan and add a generous amount of ground pork.
  5. Stir-fry over high heat until the pork is cooked and changes color.
  6. Once the pork is cooked, add the prepared onion, chili peppers, and garlic to the pan and stir-fry for about 1 minute to release fragrance.
  7. Add the prepared fish sauce (or substitute) and mix well, then let it simmer for about 1 minute to absorb the flavors.
  8. Just before turning off the heat, add the sliced scallion and lightly toss to finish.
  9. Place rice in a bowl and top generously with the stir-fried pork.
  10. In a separate pan, heat plenty of oil and fry an egg sunny-side up, then place it on top of the rice bowl to complete.
  1. Slice onion, chili, and garlic; prepare fish sauce.
  2. Stir-fry ground meat in oiled pan, add vegetables and cook for 1 minute.
  3. Add sauce, simmer until thickened, then serve over rice with a fried egg on top.

Cooking tips 💡

  • If you don't have fish sauce, anchovy sauce or sandfish sauce works just as well and still gives great flavor.
  • If you lack any fish sauce, mix soy sauce, vinegar, and sugar in the given ratio to mimic a sweet and savory Southeast Asian taste.
  • Add scallion at the very end right before turning off the heat to prevent it from wilting and losing its texture.
  • Break the yolk of the runny fried egg and mix it with the savory pork and rice for a much softer and more flavorful experience.
