Okjubu's Soft-Boiled Egg Jangjorim

Ingredients needed 🛒4 servings
- Eggs 8 pieces
- Green chili pepper 1 piece
- Red chili pepper 1 piece
- Green onion 1 bunch
- Onion 1/2 piece
- Water 1 cup plus 1/2
- Premium soy sauce 1/2 cup
- Mirin 4 tablespoons
- Sugar 3.5 tablespoons
- Minced garlic 2 tablespoons
- Black pepper to taste
- Toasted sesame seeds to taste
- Sesame oil to taste
Recipe 🍳
- Chop green chili pepper, red chili pepper, green onion, and onion lightly so they retain a slight texture without being overly fine.
- Pour water into a pot and bring to a boil. Lower the heat, then gently add 8 eggs.
- Turn the heat back on and cook for exactly 8 minutes. Immediately transfer the eggs to cold water to cool, then peel the shells off.
- In a new pot, combine 1 cup plus 1/2 water, 1/2 cup premium soy sauce, 4 tablespoons mirin, 3.5 tablespoons sugar, 2 tablespoons minced garlic, and black pepper. Bring to a gentle boil.
- Let the seasoned soy sauce mixture cool completely.
- Place the boiled eggs and chopped vegetables into a container, pour the cooled sauce over them, and refrigerate for at least one day to mature.
- Just before serving, drizzle with sesame oil and sprinkle toasted sesame seeds.
- Lightly chop green onion, onion, and chili peppers.
- Boil eggs in simmering water for 8 minutes, then cool immediately in cold water and peel.
- Boil water, premium soy sauce, mirin, sugar, garlic, and pepper together, then let the mixture cool completely.
- Place eggs and vegetables in a container, pour the cooled sauce over them, let sit overnight, then serve with toasted sesame seeds and sesame oil.

- Do not add toasted sesame seeds or sesame oil to the sauce beforehand, as the oil may turn rancid. Instead, sprinkle them just before serving.
