Okjubu's Cabbage Cheese Pancake

- cabbage 1/4 head
- cleaned shrimp handful
- green chili pepper 2 pieces
- egg 2 pieces
- pepper a pinch
- salt a pinch
- vegetable oil sufficient amount
- rice paper 1 sheet
- mozzarella cheese to taste
- tonkatsu sauce a little
Recipe 🍳
- Wash the cabbage thoroughly under running water and finely chop it.
- Finely mince the cleaned shrimp and 2 green chili peppers using a knife, then place them in a mixing bowl.
- Add the chopped cabbage, minced shrimp, and minced green chili peppers to the bowl, crack in 2 eggs.
- Sprinkle a pinch of pepper and salt for seasoning, then mix well until all ingredients are evenly combined without clumping.
- Heat a pan over medium-high heat, add sufficient vegetable oil, and spread the cabbage mixture into a round, even shape.
- Dip one rice paper sheet briefly in water, remove, and place it directly onto the pancake mixture, pressing it firmly to adhere.
- When the bottom side turns golden brown, flip the pancake and generously sprinkle mozzarella cheese on the cooked side.
- Fold the pancake in half, press down firmly with a spatula, and continue cooking until the cheese is fully melted. Serve with tonkatsu sauce.
- Chop cabbage finely, and finely mince shrimp and green chili peppers.
- Mix all prepared ingredients with 2 eggs, salt, and pepper to form the batter.
- Spread the batter in a pan, place soaked rice paper on top, cook, flip, add cheese, fold in half, and finish cooking.
