  • beef ribeye (or sirloin) 200g
  • pear 1/2
  • cucumber 1/2
  • whole garlic 3 cloves
  • egg yolk 1
  • sesame oil 2 tablespoons
  • toasted sesame seeds to taste
  • salt 25g
  • sugar 150g
  • monosodium glutamate 10g
  • black pepper 5g
  • minced garlic 40g
  • freshly ground pineapple 200g
  • mirin (mihyang) 450g
  • premium soy sauce 110g

Recipe 🍳

  1. In a bowl, combine salt 25g, sugar 150g, monosodium glutamate 10g, black pepper 5g, minced garlic 40g, freshly ground pineapple 200g, mirin 450g, and premium soy sauce 110g. Stir until fully dissolved to create the special marinade.
  2. Slice the lean beef ribeye thinly against the grain to ensure tenderness.
  3. Cut the pear and cucumber into thin strips, and slice the whole garlic thinly for garnish.
  4. Arrange the sliced pear and cucumber around the edge of the serving plate in an attractive pattern.
  5. Add sesame oil 2 tablespoons and toasted sesame seeds to the sliced beef, gently tossing to coat without breaking the pieces. Place the mixture in the center of the plate.
  6. Create a small indentation in the center of the beef, place the egg yolk on top, garnish with sliced garlic, and drizzle 50g of the reserved special marinade just before eating. Mix lightly and enjoy.
  1. Mix salt, sugar, fresh pineapple, mirin, and soy sauce to prepare the special liquid marinade.
  2. Slice lean ribeye against the grain and prepare garnishing vegetables.
  3. Lay out pear and cucumber on the plate, then add the beef tossed with sesame oil and sesame seeds, topped with egg yolk.
  4. Just before serving, pour the separate special marinade over and gently mix to enjoy.
