Lee Yeon-bok's Brothy Zucchini Stir-fry

Ingredients needed 🛒2 servings
- 2 zucchinis
- 1 king oyster mushroom
- 1 handful oyster mushrooms
- 1/2 onion
- 1/2 green onion
- a few dried chili peppers
- 1 cheongyang chili pepper
- 2 generous pinches sea salt
- 2 tablespoons salted shrimp
- 1 tablespoon minced garlic
- 1 tablespoon sugar (or stevia)
- 1 tablespoon gochugaru
- 1 tablespoon oyster sauce
- 1 tablespoon seasoned soy sauce
- a drizzle of sesame oil
- 1.5 tablespoons cooking oil
Recipe 🍳
- Cut the zucchinis in half lengthwise, then slice into 7mm thick half-moons.
- Sprinkle the zucchini with 2 generous pinches of sea salt, let sit for 2 minutes, then gently squeeze out excess moisture.
- Tear the oyster mushrooms lengthwise, and slice the king oyster mushroom lengthwise into similarly sized pieces.
- Julienne the onion, and thinly slice the green onion and cheongyang chili pepper.
- Heat oil in a pan over medium-low heat, and sauté the minced garlic and green onion until fragrant.
- When the green onion and onion turn translucent, add the zucchini, onion, and mushrooms in order.
- Cover the pan and steam-cook for 1 minute to wilt the vegetables.
- Add 2 tablespoons salted shrimp, 1 tablespoon sugar, 1 tablespoon gochugaru, 1 tablespoon oyster sauce, 1 tablespoon seasoned soy sauce, and cheongyang chili pepper, then stir-fry.
- Cover again and simmer for another minute, then finish with a drizzle of sesame oil.
- Slice zucchini into half-moons and salt for 2 minutes.
- Prepare mushrooms and vegetables into bite-sized pieces.
- Sauté garlic and green onion in oil until fragrant.
- Add zucchini, mushrooms, and vegetables, cover, and cook for 1 minute.
- Add salted shrimp, oyster sauce, and other seasonings, stir-fry, then cover and simmer for 1 more minute.
- Drizzle with sesame oil and serve.
Cooking tips 💡
- Cut zucchini 7mm thick to maintain a pleasant crunch without becoming too soft.
- Covering the pan mid-cooking allows the ingredients to steam gently, using less oil while keeping them tender.
