Lee Yeon-bok's Brothy Zucchini Stir-fry

Ingredients needed 🛒2 servings

  • 2 zucchinis
  • 1 king oyster mushroom
  • 1 handful oyster mushrooms
  • 1/2 onion
  • 1/2 green onion
  • a few dried chili peppers
  • 1 cheongyang chili pepper
  • 2 generous pinches sea salt
  • 2 tablespoons salted shrimp
  • 1 tablespoon minced garlic
  • 1 tablespoon sugar (or stevia)
  • 1 tablespoon gochugaru
  • 1 tablespoon oyster sauce
  • 1 tablespoon seasoned soy sauce
  • a drizzle of sesame oil
  • 1.5 tablespoons cooking oil

Recipe 🍳

  1. Cut the zucchinis in half lengthwise, then slice into 7mm thick half-moons.
  2. Sprinkle the zucchini with 2 generous pinches of sea salt, let sit for 2 minutes, then gently squeeze out excess moisture.
  3. Tear the oyster mushrooms lengthwise, and slice the king oyster mushroom lengthwise into similarly sized pieces.
  4. Julienne the onion, and thinly slice the green onion and cheongyang chili pepper.
  5. Heat oil in a pan over medium-low heat, and sauté the minced garlic and green onion until fragrant.
  6. When the green onion and onion turn translucent, add the zucchini, onion, and mushrooms in order.
  7. Cover the pan and steam-cook for 1 minute to wilt the vegetables.
  8. Add 2 tablespoons salted shrimp, 1 tablespoon sugar, 1 tablespoon gochugaru, 1 tablespoon oyster sauce, 1 tablespoon seasoned soy sauce, and cheongyang chili pepper, then stir-fry.
  9. Cover again and simmer for another minute, then finish with a drizzle of sesame oil.
  1. Slice zucchini into half-moons and salt for 2 minutes.
  2. Prepare mushrooms and vegetables into bite-sized pieces.
  3. Sauté garlic and green onion in oil until fragrant.
  4. Add zucchini, mushrooms, and vegetables, cover, and cook for 1 minute.
  5. Add salted shrimp, oyster sauce, and other seasonings, stir-fry, then cover and simmer for 1 more minute.
  6. Drizzle with sesame oil and serve.

Cooking tips 💡

  • Cut zucchini 7mm thick to maintain a pleasant crunch without becoming too soft.
  • Covering the pan mid-cooking allows the ingredients to steam gently, using less oil while keeping them tender.
