Lee Yeon-bok 3-Minute One-Pan Mapo Tofu

A super simple mapo tofu made in just 3 minutes using only a frying pan, perfect for camping or home cooking with silken tofu and eggs.

Ingredients needed 🛒2 servings

  • silken tofu 1 block
  • egg 2 pieces
  • green onion 0.5 bunch
  • minced garlic 0.5 tablespoon
  • red bell pepper a little (optional)
  • green chili pepper a little (optional)
  • water 3~4 tablespoons
  • oyster sauce 1 tablespoon
  • doubanjiang 0.5 tablespoon
  • sugar 1 tablespoon
  • soy sauce 0.5 tablespoon
  • black pepper a little

Recipe 🍳

  1. Chop green onion finely, and prepare 0.5 tablespoon of minced garlic. For color, dice a small amount of red bell pepper.
  2. In a bowl, mix water 3~4 tablespoons, oyster sauce 1 tablespoon, doubanjiang 0.5 tablespoon, sugar 1 tablespoon, soy sauce 0.5 tablespoon, and a little black pepper to make the sauce.
  3. Place the whole block of silken tofu in the center of an ungreased frying pan.
  4. Crack 2 eggs around the edges of the pan, spreading them along the sides.
  5. Using a knife or spatula, cut the tofu into large, bite-sized pieces directly on the pan surface.
  6. Evenly pour the prepared mapo sauce over the tofu and eggs.
  7. Simmer gently until the sauce thickens slightly. Garnish with chopped green chili pepper to taste before serving.

  3. Cut the tofu into large pieces on the pan, then pour the sauce and simmer until the sauce thickens.

Cooking tips 💡

  • Avoid frying silken tofu in oil, as its high moisture content can cause dangerous splattering; cooking without oil is much safer.
  • The eggs and sauce blend beautifully with the soft tofu, making it ideal served over rice as a comforting bowl meal.
