A unique napa cabbage geotjeori that maximizes the nutty flavor of red pepper powder and garlic by pouring warm cooking oil over them.

Ingredients needed 🛒3 servings
- Half a head of napa cabbage
- 2 stalks green onion
- Half cup cooking oil (about 105ml)
- 1 cup spicy red pepper powder
- 1 cup coarse red pepper powder
- Half cup sugar
- 1.5 tablespoons Miwon (MSG)
- 4 tablespoons minced garlic
- Half cup kanari fish sauce
Recipe 🍳
- Pour about half a cup of cooking oil into a pan and warm it gently (just until hot, not smoking).
- In a bowl, combine spicy red pepper powder, coarse red pepper powder, sugar, Miwon, minced garlic, and kanari fish sauce in the specified amounts, and mix roughly.
- Pour the warmed oil over the seasoning mixture and stir evenly to create a fragrant oil seasoning paste.
- Cut the green onions into 6 cm lengths. Trim the tough base of the napa cabbage, then slice it diagonally into bite-sized pieces.
- Place the prepared cabbage and green onions in a bowl. Gradually add the seasoning paste, tossing gently to coat without bruising the vegetables.
- Warm the cooking oil in a pan.
- Pour the hot oil over red pepper powder, fish sauce, garlic, and other seasoning ingredients to make the seasoning paste.
- Cut the cabbage and green onions into bite-sized pieces.
- Gradually add the seasoning paste to the vegetables and toss gently.
Cooking tips 💡
- The green joints of the green onion often contain dirt inside, so it's best to remove that part and set it aside for stock.
- Since the cabbage is not salted before mixing, its crunchy texture remains intact, making it an excellent accompaniment to meat dishes.
- This seasoning paste works not only with firm vegetables like scallions or green onions, but also with fruits like apples and pears to make a fruit geotjeori (fruit kimchi).
