Recipe

In a bowl, place 310g bread flour, 45g sugar, 5g salt, and 5g instant dry yeast without letting them touch each other.
Add 175g lukewarm milk and 40g room-temperature egg, knead to form a dough, then let it rest for 15 minutes.
Add 35g room-temperature unsalted butter and knead by hand until smooth, then let it undergo the first fermentation in a warm place for about 1 hour until doubled in volume.
Punch down the fermented dough, divide into equal-sized pieces, round them, and let them rest for 15 minutes for the intermediate proof.
Round the dough pieces again, place them in an oven pan, and let them undergo the second fermentation for about 40 minutes until doubled in size.
Lower the oven preheated to 190℃ to 170℃, bake for about 18 minutes until golden brown, then brush the surface well with melted butter to finish.

Mix bread flour, dry ingredients, milk, and egg, then add butter and knead until smooth.
After the first fermentation, divide and shape into rounds, rest briefly, place in a pan, and let undergo the second fermentation.
Bake in a 170°C oven, then brush the surface with melted butter to finish.

Cooking tips

If the yeast and salt come into direct contact, the fermentation power may decrease, so it is best to make separate wells in the flour and mix them in separately.
Brushing the surface of freshly baked morning rolls with melted butter prevents moisture loss and keeps them moist for a long time.
