Ttukdak Hyung's All-Purpose Soy Sauce Gosari Bokkeum

A super simple bracken fern stir-fry coated in a sweet and savory all-purpose soy sauce seasoning and finished with the nuttiness of perilla seed powder.

Ingredients needed 🛒2 servings

  • 1 pack of boiled bracken fern
  • 1/2 green onion
  • Regular soy sauce
  • Corn syrup
  • Cooking wine
  • Sugar
  • Oyster sauce
  • Minced garlic
  • A pinch of black pepper
  • Adequate cooking oil
  • 1.5 tbsp perilla seed powder
  • A pinch of sesame seeds

Recipe 🍳

  1. Finely chop the green onion, then mix regular soy sauce, corn syrup, cooking wine, sugar, oyster sauce, minced garlic, and black pepper to make the all-purpose soy sauce seasoning.
  2. Add an adequate amount of cooking oil to a pan, then spread out the drained boiled bracken fern.
  3. Pour the prepared all-purpose soy sauce seasoning evenly over the bracken fern and stir-fry over medium heat until the seasoning is absorbed.
  4. When the sauce has nearly evaporated, turn off the heat, add perilla seed powder, and toss using residual heat.
  5. Plate the finished gosari bokkeum neatly in a bowl and sprinkle with sesame seeds to finish.

  2. In an oiled pan, add the bracken fern and seasoning sauce, and stir-fry until the sauce has nearly evaporated.
  3. Turn off the heat, mix in perilla seed powder and sesame seeds for a nutty finish.

  • The amount of sugar in the seasoning may seem high, but since this is a side dish meant to be kept and eaten over time, using the specified amount brings out the best flavor.
  • Instead of bracken fern, you can also boil dried siraegi (radish greens) and stir-fry them in the same way—it works very well.
