Ingredients needed 🛒1 servings
- Your favorite fruits (cherry tomatoes, black sapphire grapes, mango, etc.) - as needed
- Isomalt - as needed
- Ice water - as needed
Recipe 🍳
- Wash the prepared fruits like cherry tomatoes, black sapphire grapes, and mango thoroughly, then skewer them onto wooden sticks in your desired order.
- Place the isomalt in a dry pan and turn on the heat to melt it until no granules are visible and it becomes completely transparent.
- Once the isomalt syrup is fully melted, reduce or turn off the heat. Wait until the tiny bubbles on the surface settle and the syrup becomes smooth.
- Using a spoon or similar utensil, lightly drizzle the bubble-free isomalt syrup over the fruit skewers to form a thin, even coating.
- Immediately after coating, dip the skewers into the prepared cold ice water to instantly harden and crisp the outer syrup layer.
- Clean and prepare the fruits, then skewer them firmly onto wooden sticks.
- Melt the isomalt in a pan until transparent, then wait for the surface bubbles to subside.
- Thinly drizzle the syrup over the fruit and immediately dip in ice water to set it cold and crispy.
Cooking tips 💡
- Isomalt does not affect insulin or teeth and has half the calories of sugar, but overconsumption may cause stomach pain or diarrhea, so only consume a moderate amount per day.
- Only coat the fruit after the bubbles in the isomalt syrup have completely disappeared; this creates a thin, hard, glass-like, transparent coating without bubble marks.
- If the fruit surface has any moisture, the hot syrup coating will not adhere properly and will peel off easily. Before cooking, thoroughly dry the fruit with a paper towel.
