- shredded cabbage, as needed
- seasoned salt, a pinch
- 2 sheets gim
- perilla oil, as needed
- buckwheat noodles, as needed
- wasabi, a little
- cucumber, a little
- fried tofu pieces, as needed
- soy sauce, a little
- stevia, a little
- pickled radish, a little
- avocado, a little
- radish sprouts, a little
- fresh salmon, as needed
Recipe 🍳
- Sprinkle seasoned salt over the shredded cabbage, mix well, and let it sit to pickle briefly.
- Prepare one and a half sheets of gim, lightly moisten the edges with water, and join them lengthwise.
- Mix the boiled and cold-rinsed buckwheat noodles with perilla oil until evenly coated.
- Spread the perilla oil buckwheat noodles evenly over the joined gim, and spread wasabi to taste.
- Squeeze the pickled cabbage and shredded cucumber as dry as possible, then place them on top of the noodles.
- In a pan, add water, soy sauce, stevia, and fried tofu, and simmer until the liquid is completely absorbed to make braised fried tofu.
- Squeeze the braised fried tofu dry, place it on top, then add pickled radish, avocado, radish sprouts, and salmon in order, and roll tightly.
- Salt the cabbage to pickle, and mix buckwheat noodles with perilla oil.
- Braise the fried tofu in soy sauce and stevia until dry.
- Spread the noodles on the joined gim, add the pickled vegetables, braised tofu, salmon, and avocado, and roll up.

- Squeeze the filling ingredients (cabbage, cucumber, fried tofu) as dry as possible to prevent the gim from tearing or becoming soggy.
- Using stevia instead of regular sugar to braise the fried tofu significantly reduces carbs and calories.
