  • 1 squid
  • 1 tbsp minced garlic
  • 1.5 tbsp soy sauce
  • 1 tbsp sugar
  • 1/2 tsp chicken stock
  • some cooking oil

Recipe 🍳

  1. Make diagonal cuts closely on the inside of the squid body, then rotate 90 degrees and score in a diamond pattern.
  2. Cut the scored squid into bite-sized pieces.
  3. Heat cooking oil in a pan, add 1 tbsp minced garlic and the squid, and stir-fry to coat with the fragrant garlic oil.
  4. Once the squid surface is coated in garlic oil, immediately add the soy sauce, sugar, and chicken stock.
  5. Keep the heat on high and stir-fry, letting the sauce bubble and thicken, reducing until glossy.
  6. Continue until the sauce fully penetrates the squid cuts and the squid turns a dark, glossy brown like dakgangjeong.
  1. Score the squid in a diamond pattern and cut into bite-sized pieces.
  2. In an oiled pan, stir-fry minced garlic and squid, then add soy sauce, sugar, and chicken stock.
  3. Over high heat, stir-fry until the sauce is fully reduced and glossy.

Cooking tips 💡

  • Scoring the squid densely helps it curl up prettily and allows the sweet-savory sauce to soak into the wide surface area of the cuts.
  • Adding a small amount of chicken stock to the soy sauce base balances the umami, creating a universally appealing flavor that clings to the palate.
