Park Eun-young's Jjamppong Ramen

Ingredients needed 🛒2 servings
- 2 packets of spicy packet ramen
- 1/2 squid
- 6 shrimp
- 1 shiitake mushroom
- 1/2 onion
- 1/4 zucchini
- 1/2 green onion
- 1 head of bok choy
- 1 red chili pepper
- 1.5 tbsp minced garlic
- 2 tbsp chili oil
Recipe 🍳
- Julienne the onion, shiitake mushroom, zucchini, and red chili pepper. Finely chop the green onion. Trim the base of the bok choy and cut it into bite-sized pieces.
- Clean and prepare the squid and shrimp, then cut them into bite-sized pieces. Slightly scoring the back of the shrimp will make them look prettier when cooked.
- Heat chili oil (or cooking oil) in a pan, add 1 tbsp of minced garlic and the chopped green onion, and stir-fry to create a rich garlic-scallion oil aroma.
- Once the aroma is released, add all the vegetables (except bok choy) and seafood, along with the entire contents of the ramen seasoning and dried vegetable packets, and stir-fry together.
- If the mixture starts to burn while stir-frying, add a very small amount of water little by little to prevent sticking. The juices from the ingredients will create a deep broth.
- Once the ingredients are softened and well-stirred, add the standard amount of water for 2 servings of ramen and bring to a boil over high heat.
- When the broth is boiling vigorously, add the ramen noodles, prepared bok choy, and red chili pepper all at once and cook.
- While the noodles are cooking, use tongs to lift and lower them repeatedly, exposing them to air to enhance their chewiness.
- When the noodles are cooked to your liking, add the remaining 1/2 tbsp of minced garlic just before turning off the heat to add a refreshing garlic flavor and finish.
- Chop vegetables and seafood into bite-sized pieces.
- Heat chili oil in a pan, stir-fry green onion and minced garlic to release aroma.
- Add vegetables, seafood, and ramen seasoning, stir-frying with a little water until rich.
- Pour in water, bring to a boil, add noodles and bok choy, cook, then finish with minced garlic.
Cooking tips 💡
- Adding a tablespoon or two of water when first stir-frying the seasoning and ingredients prevents burning and allows the seasoning to penetrate the ingredients smoothly, resulting in a much deeper flavor.
- The half tablespoon of minced garlic added just before the end of cooking eliminates any dullness in the broth and maximizes a fresh, clean flavor.
- If you have leftover bean sprouts or thinly sliced pork belly at home, you can stir-fry them along with the other ingredients to add refreshingness or richness.
