  • white button mushrooms 1/2 piece
  • shiitake mushrooms 1 piece
  • yellow button mushrooms 1 piece
  • green kale 1 bunch
  • bamboo shoots a little
  • zucchini pumpkin a little
  • medium shrimp 3–4 pieces
  • squid enough to serve
  • minced garlic 1 tablespoon
  • soy sauce 1/2 tablespoon
  • oyster sauce 1/3 tablespoon
  • salt a little
  • seasoning a little
  • pepper a little
  • egg 1 piece
  • sesame oil a little

Recipe 🍳

  1. Boil fresh noodles in boiling water, then rinse under cold water to remove excess moisture. Set aside in a bowl.
  2. Cut white button mushrooms, shiitake mushrooms, yellow button mushrooms, bamboo shoots, zucchini pumpkin, and squid into bite-sized pieces. Split the shrimp along the back.
  3. Blanch the cut vegetables and seafood in boiling water briefly, then remove and set aside.
  4. Bring water to a boil in a pot. Add minced garlic, soy sauce, oyster sauce, salt, seasoning, and pepper to adjust the broth flavor.
  5. Once the broth boils, add the blanched ingredients and simmer briefly while skimming off any foam that rises to the surface.
  6. Gently stir in beaten egg and drizzle with sesame oil. Pour the broth and solids over the prepared noodles to finish.
  1. Cook the noodles and set them aside in a bowl.
  2. Cut mushrooms, vegetables, and seafood into bite-sized pieces and blanch in boiling water.
  3. Boil water and add minced garlic and seasonings to make the broth.
  4. Add the blanched ingredients to the broth, then finish by adding beaten egg and sesame oil.

  • After adding the egg mixture, avoid vigorous stirring as it may cloud the broth; gently stir to keep it clear and clean.
  • For an extra spicy and refreshing kick, slice some green chili peppers and add them according to taste.
