- fresh noodles 1 serving
- white button mushrooms 1/2 piece
- shiitake mushrooms 1 piece
- yellow button mushrooms 1 piece
- green kale 1 bunch
- bamboo shoots a little
- zucchini pumpkin a little
- medium shrimp 3–4 pieces
- squid enough to serve
- minced garlic 1 tablespoon
- soy sauce 1/2 tablespoon
- oyster sauce 1/3 tablespoon
- salt a little
- seasoning a little
- pepper a little
- egg 1 piece
- sesame oil a little
Recipe 🍳
- Boil fresh noodles in boiling water, then rinse under cold water to remove excess moisture. Set aside in a bowl.
- Cut white button mushrooms, shiitake mushrooms, yellow button mushrooms, bamboo shoots, zucchini pumpkin, and squid into bite-sized pieces. Split the shrimp along the back.
- Blanch the cut vegetables and seafood in boiling water briefly, then remove and set aside.
- Bring water to a boil in a pot. Add minced garlic, soy sauce, oyster sauce, salt, seasoning, and pepper to adjust the broth flavor.
- Once the broth boils, add the blanched ingredients and simmer briefly while skimming off any foam that rises to the surface.
- Gently stir in beaten egg and drizzle with sesame oil. Pour the broth and solids over the prepared noodles to finish.
- Cook the noodles and set them aside in a bowl.
- Cut mushrooms, vegetables, and seafood into bite-sized pieces and blanch in boiling water.
- Boil water and add minced garlic and seasonings to make the broth.
- Add the blanched ingredients to the broth, then finish by adding beaten egg and sesame oil.
