Lee Yeon-bok's Oyster Rice
A one-bowl delicacy of seasonal oysters, blanched for a chewy texture, and crunchy bean sprouts tossed in a special vegetable seasoning sauce.

Ingredients needed 🛒1 servings
- 1 pack fresh oysters (as needed)
- 1 handful bean sprouts
- 1 serving instant rice
- 1/8 onion
- 1/5 cucumber
- 1 cheongyang chili pepper
- 1/4 green onion
- 50ml muk ganjang
- 100ml water
- 1 tbsp sugar
- 1 tbsp apple cider vinegar
- 1 tbsp sesame oil
Recipe 🍳
- Dice the onion, cucumber, cheongyang chili pepper, and green onion into a coarse dice to preserve texture.
- In a bowl, combine 50ml muk ganjang, 100ml water, 1 tbsp sugar, 1 tbsp apple cider vinegar, and 1 tbsp sesame oil. Add the prepared vegetables to make a special bibim seasoning sauce.
- Add a handful of clean bean sprouts to boiling water and blanch until cooked. Remove and set aside. (Do not discard the blanching water; it can be reused for soup.)
- In the same boiling water, add the rinsed fresh oysters and blanch lightly until about 60-70% cooked.
- Immediately transfer the blanched oysters to cold water to cool completely, then drain in a colander.
- Heat the instant rice in the microwave and place it in a bowl. Top generously with the blanched bean sprouts and plump oysters.
- Pour an appropriate amount of the prepared bibim seasoning sauce over the top and gently mix before eating.
- Finely chop onion, cucumber, chili pepper, and green onion. Mix with soy sauce seasoning ingredients to make the sauce.
- Blanch bean sprouts in boiling water and remove. Lightly blanch oysters in the same water, then rinse in cold water.
- Place warm rice in a bowl and top with blanched bean sprouts and oysters.
- Serve with the sweet and sour vegetable seasoning sauce and mix to finish.
Cooking tips 💡
- If you cook oysters too long, they shrink and become tough. Blanch only briefly so the juices are locked in and they stay plump and chewy.
- Adding plenty of cucumber and onion to the seasoning sauce amplifies the crunchy texture and refreshing taste.
