  • Chinese noodles 1 serving
  • wild mushroom 1–2 pieces
  • mint a handful
  • dashi cube 1 piece
  • minced garlic 1 tablespoon
  • soy sauce a little
  • liquid seasoning (yeondu) a little
  • starch slurry a little
  • olive oil a little
  • salt a little
  • pepper a little

Recipe 🍳

  1. Scrape the outer surface of the wild mushrooms lightly, then tear them along the grain.
  2. Heat a pan with olive oil, add the torn wild mushrooms, salt, and pepper, and sauté until golden brown.
  3. Bring water and the dashi cube to a boil in a pot, remove the dashi cube, then add 1 tablespoon of minced garlic.
  4. Season the broth with soy sauce and liquid seasoning (yeondu), then add the starch slurry to thicken the consistency.
  5. Boil the Chinese noodles in water, rinse under cold water, and set aside in a bowl.
  6. Add the sautéed wild mushrooms and chopped mint to the thickened broth and gently simmer for a moment.
  7. Pour the broth and toppings over the prepared noodles to finish.
  1. Tear wild mushrooms along the grain and sauté in a pan with salt and pepper.
  2. Make broth using a dashi cube, then add minced garlic, soy sauce, and liquid seasoning.
  3. Add starch slurry to thicken the broth.
  4. Place boiled Chinese noodles into a bowl.
  5. Add mushrooms and mint to the broth, simmer briefly, then pour over the noodles to complete.

Cooking tips 💡

  • Do not wash mushrooms under water as it will wash away their aroma—just wipe or lightly scrape the outer surface.
  • Mint and mushrooms lose their fragrance if cooked too long, so add them at the end and just briefly simmer.
  • When adding the starch slurry, reduce the heat and gradually stir in small amounts to prevent clumping.
